Summer Drinks!




Today we spent some time in the lodge preparing to debut our snack shack tomorrow. Campers decided on a menu and name for their business. Not only can they cook, but they are all very artistic as well. Check out their colorful signage below!

After that, it was back into the kitchen where we whipped up these delicious watermelon slushies. It may be 7/11, but 711 slurpies have nothing on our refreshing and healthy version.





Watermelon-Cranberry-Lime Slushy (Serves 6)

1 / 4 (3-pound) seedless watermelon, rind removed
 2 cups cranberry juice
 2 teaspoons fresh lime juice
 6 cups ice cubes
 6 lime slices
 6 fresh mint sprigs

Slice 6 (4-by-1 / 2-inch) spears off the watermelon to use as garnish.
 Arrange the spears on a baking sheet lined with wax paper and freeze 45 minutes to 1 hour until solid.
 Dice the remaining watermelon (about 3 1 / 2 cups) and place in a blender with cranberry juice and lime juice.
Blend on medium speed 20 seconds until well combined. Add ice. Blend on high speed until the ice is finely crushed. Pour into 6 glasses.
Garnish each with a watermelon spear, a lime slice and a mint sprig.
